How to Make Water Kefir
Making water kefir is a lot of fun, but it can be tricky to get started. Here's our foolproof method for making delicious water kefir at home!
First, you'll need to gather your ingredients: Kombucha Cultures sells a wide variety of kombucha cultures, including SCOBYs and Jun cultures. You can also find water kefir grains and Kombucha Cultures Scoby for sale on their site.
You'll also need a digital refractometer , When you are brewing your water kefir, take a refractometer reading before and after the fermentation process. These values will help you determine the specific gravity (SG) of your fermented beverage. The SG is the ratio of weight to volume of water (1.000 = pure water).
Also need some kind of container to use as a starter jar. We recommend using an old kombucha bottle with a plastic lid—you can just rinse out the residue from previous batches before using it again! And finally, you'll need some sugar—we like using organic sugar cane or coconut sugar.
Once you've gathered all of those items together, it's time to start brewing your first batch of water kefir grains! First step is adding your starter jar (about 1/2 cup) with sugar (1/2 cup), and then filling the rest with filtered water. Let this sit overnight (or at least 8 hours). Then strain out the grains into another container and add them back into the starter jar along with another 1/2 cup of filtered water and 1/2 cup.
