Water kefir is a slightly sweet, effervescent fermented beverage that you can make at home with just a few ingredients and some patience. The process of making water kefir involves adding sugar and water to your grains, letting them ferment in a jar with a loose-fitting lid, and then using a strainer to separate out the grains.
You can either buy water kefir grains online or from a health food store. If you go this route, be sure to select grains from a reputable source for water kefir recipe.
Once you have your water kefir grains, follow these steps:
1) Add 3/4 cup of sugar to 1 quart of filtered water and stir until dissolved.
2) Add the water kefir grains and let them soak for 24 hours in the sugary water at room temperature. Your kitchen counter will work just fine!
3) After 24 hours, strain out the grains using an old t-shirt or cheesecloth and discard them. Pour the liquid into a glass jar or bottle with a tight-fitting lid (you can reuse an old kombucha bottle if you have one). Leave it on the counter at room temperature for another 24 hours so it can ferment further. You'll notice that it starts to look cloudy—this is normal!
4) After 48 hours of fermentation time (48 hours in total), place your bottled kefir in the refrigerator.
