The source of Rennet is an organic substance that also contains the rennin enzyme. It is primarily located in the fourth stomach lining of young goats, calves, and lambs. It only happens to these animals when still milk is their primary diet. This enzyme, which is present in the stomachs of young dairy-consuming animals, disappears once they switch to a diet of only grass. It is responsible for the digestion-related curdling of milk.
Rennet not only animals possess this element. An enzyme-like substance is also present in plants like nettles, artichokes, and cardoon thistles. In many regions of Spain and Portugal, these are traditionally the ingredients of choice for cheese makers and are frequently used to create vegetarian cheeses. For older people, animal-derived Rennt is preferable to the other camp.
