The bright yellow, red, and orange hues of fruits, vegetables, and other plants are produced by a class of antioxidants called carotenoids, which includes Lutein (pronounced loo-teen). Free radicals are reactive substances that, if their presence isn't controlled, can harm our organs and, by extension, our health. Antioxidants counteract the activity of free radicals.

When reporting the "lutein + zeaxanthin" content of foods, information sources like the United States Department of Agriculture's Food Composition Database frequently combine lutein and another carotenoid called zeaxanthin (zee-uh-zan-thin) into one category because they are so similar to one another.
